Butter oil is not ghee or clarified butter. Ghee is produced by heating and “clarifying” butter, which means separating the milk proteins from the butterfat. Green Pasture’s butter oil is made by centrifuging milk without heat. Moreover, only milk from grass-fed cows is used. Milk from grass-fed cows is richer in vitamin K2-MK4 than milk from non-grass-fed cows.
